Suggested Preparation: Herb Roasted Lamb Chops
- Combine 4 cloves of garlic (thinly sliced), fresh thyme & rosemary, 1 tablespoon of olive oil, and salt & pepper (to taste)
- Marinate the lamb with this mixture at room temperature for 30 minutes to an hour.
- Preheat oven to 400°F.
- Heal 1 tablespoon of olive oil in a large skillet over high heat. Add lamb and cook until browned, about 3 minutes per side.
- Transfer skillet to the oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare. Let the lamb rest for 5 minutes before serving.
